Instructions
- Preheat your oven to 175°C (350°F). Grease and flour two 8-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract. Gradually add the flour mixture, alternating with milk, starting and ending with the flour mixture. Mix until just combined.
- Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- While the cakes are cooling, prepare the whipped cream. In a large chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
- To assemble, place one cake layer on a serving plate. Spread a layer of whipped cream and top with half of the sliced strawberries.
- Place the second cake layer on top, spread more whipped cream, and arrange the remaining strawberries decoratively.
- Chill the assembled cake for at least 1 hour before serving for the best texture.
