Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour two 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract. Gradually add the flour mixture, alternating with milk, starting and ending with the flour mixture. Mix until just combined.
  5. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  7. While the cakes are cooling, prepare the whipped cream. In a large chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  8. To assemble, place one cake layer on a serving plate. Spread a layer of whipped cream and top with half of the sliced strawberries.
  9. Place the second cake layer on top, spread more whipped cream, and arrange the remaining strawberries decoratively.
  10. Chill the assembled cake for at least 1 hour before serving for the best texture.
