Ingredients
- Premium dark chocolate
- Rich cocoa powder
- Fresh eggs and dairy
- High-quality butter and cream
- Fine granulated sugar
- All-purpose flour
- A touch of vanilla extract
- Natural chocolate truffle ganache
Recipe
- Preheat your oven to 175°C (350°F). Grease and flour two 9-inch round cake pans.
- In a large bowl, sift together 1¾ cups all-purpose flour, 2 cups granulated sugar, ¾ cup unsweetened cocoa powder, 1½ teaspoons baking powder, 1½ teaspoons baking soda, and 1 teaspoon salt.
- Add 2 large eggs, 1 cup whole milk, ½ cup vegetable oil, and 2 teaspoons vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
- Stir in 1 cup boiling water (batter will be thin). Pour batter evenly into prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow cakes to cool in pans for 10 minutes, then remove to wire racks to cool completely.
- For the truffle ganache, heat 1 cup heavy cream until just simmering. Pour over 8 ounces chopped dark chocolate in a bowl. Let sit for 5 minutes, then stir until smooth and glossy. Let cool until thickened but still spreadable.
- Place one cake layer on a serving plate and spread a generous layer of ganache on top. Add the second cake layer and cover the entire cake with remaining ganache.
